Curry Lentil Stew with Coconut Milk

You know that day when you need to decide what meal you will make for the week? Today is that day for me. Usually, I search for new recipes and buy all the groceries I need for that meal without looking at my shelves and the fridge. Since we started this blog, I have decided to change that behavior and instead first have a look at my shelves and fridge, and then, depending on what food I already have, I decide what to cook. This is good both for your pocket and the planet.


This week I found lentils and rice in my kitchen and decided to go for a tasty curry lentil stew with coconut milk. Doesn't that sound SO yummy? And guess what? I will share this recipe with you because you can't miss out on this! It takes less than 30 minutes and is super easy and quick. While the stew is boiling, you can enjoy reading a book, watching a movie, or doing whatever you want.

How I reduced my food waste:

  • I used rice and lentils that I already had at home.

  • I composted onion and garlic peel.

  • To reduce plastic waste, I bought a jar of curry spice.



Things I can do differently to make this recipe completely zero-waste:

  • To avoid extra food packaging, rice, lentils, and curry spice could have been bought from Bulk Barn or a local refiller.
