You know when you open the fridge and think there is no food in there that you can make a meal of? I feel you! It happens to me all the time. And instead of using the leftovers, I buy new groceries from the store. But since we started this blog, I have begun thinking more about what I throw away, and just because the food is leftover doesn't mean it is terrible.
What I used to make my banger lunch:
Cooked Quinoa
Tomatoes
Red onion
Strawberry Dressing (click here for the recipe)
Hummus
Halloumi
Honey
Olive oil
Heat the quinoa in the microwave for 30 seconds. Shop tomatoes and red onion. Mix quinoa, tomatoes, onion, and strawberry dressing (or the dressing of your choice. Slice up the halloumi—Fry the halloumi in a pan with olive oil. Add honey on one side of the halloumi and continue to fry. Turn the halloumi when it is perfectly fried on one side. Add halloumi on top of the salad and add a spoon of hummus on top. Enjoy!
Strawberry Dressing
1 1/4 cups frozen strawberries
1/4 cup olive oil
One garlic glove
2 tbsp balsamic
2 tbsp honey
One pinch of salt
Mix all ingredients in a blender.
How we reduced our waste:
We made lunch from leftover food that would otherwise have been thrown away.
