Meet the Food Waste Fighters

Hi everyone!

This is the first official Waste Free and Tasty blog post. We thought it was time to introduce ourselves better by first telling you some facts and then letting you know how to do both of our go-to meals.

Go-To Meal: Oatmeal with apples and peanut butter topping


I am an exchange student from Sweden and will study at the Smith School of Business for the fall semester. Besides my immense passion for travelling and meeting new people, I am a big food lover. I cook all food for myself and try to eat as much vegetarian food as possible. Furthermore, I am concerned about climate change and believe that we throw away too much food daily; therefore, a blog focusing on reducing food waste and, at the same time, teaching others how to cook tasty food is a match made in heaven, in my opinion.


Smilla's Oatmeal with Apples and Peanut Butter

What you need:

1/2 cup of oats

1/2 cup of oat milk + 2 tbs on top 1/2 tsp cinnamon

One pinch of salt One apple

Peanut Butter of your choice


Directions:

Put oats, cinnamon, salt and oat milk into a bowl of your preferred size. Mix it. Put the bowl in the microwave for 3 minutes. Then take it out and mix the oatmeal (sometimes you need to microwave for another minute to make the oatmeal sticky). Cut the apple into smaller pieces. Add a tablespoon of peanut butter and top it with some oat milk. Enjoy!

Go-To Meal: Butter Chickpeas (curry)


Hey everyone, I am currently a third-year student at Queen's University pursuing a dual degree in commerce and environmental studies. I was born and raised in Bermuda,which is where my passion for environmental sustainability stemmed from. I am especially concerned with ocean sustainability and mitigating plastic pollution. I am a dual-varsity sport athlete here at Queen's (on the Field Hockey and Squash teams), and I also LOVE to cook. (I despise doing dishes, but still I love to cook and eat). I have been a vegetarian for 4 years, and my favourite meal to cook while at school is Butter Chickpeas or a similar variation of chickpea curry.


Abby's Butter Chickpeas

What you need:

1 can of chickpeas 1/2 an onion chopped

1/4 cup of butter

1/2 cup of coconut milk

Some tomato paste / chopped up tomatoes

Smoked Paprika

Garam Masala

Salt

Cayenne Pepper


Sides:

Rice (I usually make Basmati)

Naan


Directions:

Begin by adding the chopped onions to a pan with some olive oil (or oil of your choice). While they start to brown, drain & rinse your chickpeas then add them to the pan. Side note, I would start cooking the rice at this point. Add the tomatoes in some form (either chopped, paste, sauce, etc.)Then add your spices (there is no exact measure on this, just keep adding to taste, until you have it how you like it). Then pour in the coconut milk, and let the chickpeas simmer in it for about 15-20 minutes or until they have soaked up some of the liquid. Warm up your Naan in the toaster oven, then serve your chickpeas over rice (and you can even add a dollop of plain greek yogurt on top!) Enjoy :)
